Super Orange Chop
This is a quick chop made of a combination frozen and fresh orange veggies, fruit, beans and whole grains. It’s also 1 cup measurement for most of the measurements.
1 cup of cooked black beans
1 cup of mixed beans cooked; red beans, great white northern, calicos
1 cup of cooked organic Kamut and quinoa
1 cup of cooked brown rice
1 cup of frozen mashed pumpkin
1 cup of cooked finely chopped carrots
1 cup of cooked mashed sweet potatoes
½ cup of frozen wild blueberries
½ cup of frozen pomegranate seeds
1 tablespoon dried basil
1 tablespoon dried red pepper flakes
1 teaspoon dried ginger
1/8 cup raw uncooked organic quinoa to soak up any juices
1 tablespoon uncooked rolled oats to soak up any juices
Dump everything into large bowl and stir together until well mixed. Chill for several hours and bag for the freezer. Makes 2 ¼ pounds
