I'm trying to find some healthy snacks for Doby. Do Eclectus eat pumpkin seeds with or without the shell?

That depends on the bird. Some birds enjoy peeling the shell off of them before eating them, but other birds are happy to be able to just eat the seed.

Does it matter what species. I know Eclectus are soft billed birds that don't crack a lot of nuts like other parrots?

Pumpkin seed shells are very soft. Mine love fresh pumpkin/squash seeds. i scoop them out and give them seeds and pulp!

Pumpkin seeds are among the healthy seeds and can be eaten however the bird prefers. I used to ground them and include with other foods.
