It is very doable! I bought the connector pieces on Amazon and I bought the PVC at a hardware store. I would love to see pictures of it if you do!
I'm excited now! I've been wanting some sort of tall stand with 'branches' to hang toys from. Could take a while but I'll defo share pics here if I do manage it! :D

If you wanted to do something similar, but use wood branches, you could build the frame from pvc (or 1x1 lumber), then drill holes in the frame to mount the branches. Be sure to pre-drill the branches too, so they don't split.
