2 or 3 days should be plenty long enough if you have good circulation with the windows open.

It will depend on the paint used and how fast it cures as well as how well your house exchanges air.
I recently used some VOC free paint and I was extremely surprised at the lack of fumes, I still took precautions but if you can find and use a brand with no or very very low VOC’s you should not be put out for long at all.
The paint that was used in another of my rooms stunk like new paint for weeks- I will only ever use VOC free from now on.
