This was posted on another forum about 4 years ago by PacosMom. I have been organizing my email today(yes I have over 4 years of email saved:eek:)
Had to share with all of you, but still want her to get the credit for the recipe :)
PS: Wish I had saved her real name:huh:


Mix together bags of dried beans & rice. Pinto & kidney beans, lentil, split peas, navy beans, brown rice, etc.
(just not black beans, turns all black).

Boil 2 cups water, add 1 cup bean/rice mix.
Return to boil, remove from heat, cover, let stand for 2 hours.

Cover bottom of 4 freezer bowls with elbow macaroni, uncooked.
Drain water from cooked mix. Spoon over noodles until half full.

Fill to top with frozen mixed veggies. Sprinkle over top, about ½ cup orange juice.

Cover & turn over several times to distribute juice, then freeze until ready to use.

Thaw, mix and serve.

The orange juice helps prevent spoilage, but remove uneaten portion after 4 hours.

Ok, here it is. The reason the veggies look odd is because most of my brats prefer it chopped fine, so half is chopped.

Can I ask why you leave the pasta uncooked?
I believe, if you layer it correctly, the uncooked pasta will actually absorb the moisture from the beans/veggies/orange juice. By leaving the pasta uncooked, it doesn't become overly mushy.

I know when I make up my veggie mash, as I bag it in individual serving sizes for freezing, I add a small handful of uncooked brown rice, small pasta, or quinoa .. this seems to help the veggie mash from becoming too mushy from moisture in the veggies themselves.

Thanks for sharing! Does anyone have suggestions for adding flavors to this? I have a hard time getting my GCC to eat stuff like this, and I've tried adding cinnamon & nutmeg and he doesn't seem to care for those. I had previously bought him beak appetite and I thought it smelled SOOOO good, well nope! He wouldn't eat it!

He also doesn't seem to like Orange Juice all that much, but he does like Cranberry-Cherry juice. Could I add that to this without any spoiling problems? I'd imagine is should be fine since I'd freeze it into individual portions. :confused:
