My 1st attempt at spouts was so easy (TOPS) ... but they smell sour so I am not going to serve them.... what did I do wrong?

Is it possible that you didn't rinse them well enough or left to much water in the sprouter. Do not discourage. Keep trying, eventually you will succeed and it will be worth it. It's one of those things where you just have to keep trying.
Dianne I use a stainless steel colander to let mine dry in. And instead of letting them pile in the center
I pull some up to the sides so they will dry better.
Dianne maybe you left them soaking too long. They really only need to soak for about 12 hours. Drain, rinse really well, and then let them sit out for another day or so. You can rinse them a couple of times throughout the process as well. What kind of sprouter are you using? You know not to continue to keep them in water through the whole process, correct?
I let mine soak overnight. Then I add a few drops of Apple Cider Vinegar and fill with water, swirl around, drain and rinse several times. I then rinse about 3 times through out the day. I add ACV once each day as they are sprouting. Use cool water.
I have never done well with those kind of sprouters, they don't drain properly. I use either a jar with purpose made lid, or if doing big amounts a bowl to soak then a plastic collander. You also have to rinse frequently and be scrupulous with cleanliness.
I have found that the main few things when it comes to sprouting is making sure you rinse regularly and really well, make sure there is plenty of space (this depends on how much you sprout because the mix will increase in size), and making sure the sprouts have AIR, they need air to breather, or they will mold easily and quickly.
How long are you letting them soak for? I have recently started soaking them for 8 hours and they sprout a lot quicker. I hope it works for you this time.
I usually use the TOPS Dry or Soak Seed mix, I will do an 8 hour soak with ACV in the morning and then rinse thorouhly when I finish my dinner and then shake residual water off before I tip them in a bowl to air dry for 8 hours in the dark. The dark and cool spot is what you need.
I read where they advise you don't put them in a dark spot as it makes them more likely to grow funguses. I grow mine on the kitchen counter top so they get a little light but lots of rinses. Also do makes sure all your kit is incredibely clean.
