Just a quick question, my cockatiel loves head rubs and puts her head down for me to scratch but when it's time to stop she hisses at me. Is she just mad I stopped or is it something else?

Hard to tell...but if everything is the same in the environment around you and her when you stop scritching, then you have to assume that she wants you to continue!
Milton (in avatar) loves to play "fetch and attack" empty soda bottles. The first few times we played the game, when I stopped playing, Milty gave me a bite, which I took to mean "I'm not done yet"...;)

It sounds like she could be mad you stopped. One of my tiels gets very angry when I stop scratching her, and another beak bangs me like crazy.

You mean like this? You do realize that tiels think that you are there to grant every wish?
