okay i asked him last night about the electropolishing....he says he will polish, not electropolish. The latter requires dipping in acid and he worries some will be left behind in spots the birds can access. He says he polishes it very thoroughly and the finish can be maintained with emery paper. An electropolished cage cannot be made to recover once the sheen deteriorates.

I think hand polished is the way to go, I would also worry about electropolishing changing the structure of the stainless steel.
