One thing I did notice, though, is that she tends to like the fresh chop MUCH better. Any tips to get her to eat defrosted chop?

Laura, mine also prefer fresh to defrosted. The leaves lose their crunch after being frozen unfortunately :( You can try adding some quinoa or oats to soak up the moisture to make it a little drier like fresh would be, that sometimes helps :)
