I have a U2 about 5 years old now, i just noticed he seems to leave his mouth open at rest. I just noticed it today.

I don't think he is mouth breathing since he isn't panting or anything, he's just resting on his perch with his mouth slightly open.

Do your U2s also do this?

I'll double check tomorrow morning if he still has his mouth open and if he is trying to breath through it.

Perfectly normal. A cockatoo does not/can not need to close its beak to seal the mouth. This is done with the tongue and its peculiar shape. The actual mouth is in the back of the throat.
