Cholesterol is a food group in a body, such as protein. How did you find out your parrot has low Cholesterol?

You can ask your vet and they'll tell you what to do about it.

I've literally never heard of a bird having "too low" cholesterol. In captivity, high cholesterol, which leads to Atherosclerosis, is one of the most common illnesses and causes of death.

If it was a good-rated avian vet/exotic vet, might be best to follow with their advice. I've never heard of a parrot having too little cholesterol but maybe it is possible. Perhaps just add some grains and legumes to her chop anyway. Might be best to get an opinion from another vet, too.
