Made Pita a batch of his favorite Fruity muffins today.......
Here's the recipe:
Base:
1/3 cup wheat germ
2 cups whole wheat flour
2 eggs
1 tsp baking soda
2 tsp baking powder
1/2 cup canola oil
1 tsp cinnamon (for fruity) - 1 tsp chilli powder (for veggie)
1 cup fruit juice, cranberry, apple or orange. If I have no juice I will squeez fresh oranges, or add water
Bake @ 350 for 30 to 35 minutes
1 batch makes aprox 18 muffins, and they freeze really well.
You can add whatever you like in addition. In this batch of fruity muffins I added:
Apple
blueberries
pineapple
pom seeds
pine nuts for crunch
Zupreem fruity pellets
I snuck in some broccoli & carrots - have to hide the veggies...LOL
but like I said, you can add whatever you like. In the past I've added; banana, peaches, pumpkin...etc etc you get the idea

Habanero peppers...they scared me...LOL
Spinach
kale
carrots
bell pepper (red, orange, yellow)
broccoli
sweet potato/yams
spicy Zupreem pellets
