My 2 tiny silverbill boys are very picky eith their food. They only like their seedmix, will sometimes take some eggfood of a pinch of harrison mash, but no sprouts or veggies at all.
I have been trying to convert them to the harrison mash, one off them will eat some, the othe one rather starves himself and does not touch it.
Same with veggies or sprouts.
Have been giving them only veggies and/or sprouts first thing in the morning, or put some eggfood on it, but they don't touch the healthy stuff.
My AV told me that it could be harmfull to leave them without food for only a couple hours due to their fast metabolism.
Veggies and sprouts are "no food" in yheir opinion, so after an hour i give them a small portion off seeds.
Even when seeds are mixed in the veggies or sprouts, they just pick the seeds out.
What to do?

In my experience, a lot of it is offering often, modeling (eating it yourself if they consider you part of the flock, as an example), varying the way it is offered, and portion control. Sometimes it's about being sneaky too ;)

My hardest bird has been my Jardine's. He took a while (years) to truly eat an appreciatable amount of veggies, and then he still isn't consistent. He didn't want the small bites of veggies ,he likes large chunks. So it was a lot of experimenting and offering to get him to eat anything.

Lately he hasn't been wanting to eat his veggies, so he's been getting them in bird bread made with pellets as the "flour".

I think when I'm the most stressed about their diet, they eat worse  So also make sure to remember that they are probably fine. It sounds like they get routine health care, and have the opportunity to eat veggies if they want them often. If they are getting a clean bill of health I would try to remember the old adage: "You can lead a horse to water, but can't make it drink." There's only so much we can do!

You are doing everything right from what I can read.
Birds are like children - we can do our best for them - but in the end they will make their choices.
As long as they are healthy, that is all you can do.
