I suppose it is because a lot of parrots are Australian. It would be an alternative food source if food was running low I would assume

Well grapes are toxic to dogs but not to birds, and birds eat berries that are toxic to people :) Mammals and birds are on different evolutionary paths that have different tolerances :)

My vet says she‘s not sure about eucalyptus and birds. She said the oils in it are pretty potent.

Budgies, tiels and Rosellas eat some now and again in the wild. It's supposed to help get rid of any bad gut bacteria. I bet a lot of the other aussie parrots eat it to, I just know these 3 do for sure.

Vet replied she’s not heard any warnings about keeping birds away from eucalyptus

My dog chews on eucalyptus branches all the time- always has (and so did my last dog) and has never been sick. I’ve honestly never heard of animal getting sick from chewing the branches and most people’s dogs I know if love to chew the branches. They would have to actually ingest a lot of it or already be fairly unhealthy for it to be a problem.
As for birds? Burt loves eucalyptus branches, nuts and flowers. He has them all the time same with Squeak.

You made me look... I didn't realize there are 700 species of eucalyptus! This is what I found:
