Egg whites are fine to feed consistently, but the yolks are another matter and should be fed very sparingly, due to cholesterol and high fatty content, White are nearly100% protein and easily digested. My vet told me to feed about 1/3 of a yolk, once a week to my macaw.

I know this is an older post but I thought I'd chime in. Experts are finding a link between foods high in saturated fat (like eggs and meat) and heart disease in parrots. Check out Dr. Scott Echols on this. Substituting plant sources of protein like hempseed, chia, quinoa (esp soaked), buckwheat, sprouted legumes (Mung, Adzuki and Garbanzo) and some nuts are much better sources. I personally don't feed eggs at all. Unless your vet has made it as a special recommendation for your bird, I'd leave it out.
