Do rosy bourkes need gravel with their food? I can't find an answer online. What about just oysters shells for calcium?

Nope - just a cuttlebone. Oyster shell & gravel are for birds that can't open seeds with their beaks. Hookbills (parrots, parakeets, etc) don't need any help with that.

agreed. No grit. My Bourkes nibble on their cuttlebone nearly every day.

Cuttlebone and mineral blocks are actually a form of "grit".

I hardly ever give any to my birds....
