Sprinting down the street
or, the continuing saga of the evolution of "5 grain cookie" recipe. I went shopping before my first cup of coffee. I was disappointed in my local Whole Foods as there are a few things they don't carry that I usually use. Like RPO. They don't carry it anymore. So, there isn't any in this batch.
Multi grain cereal must have a new name as they don't have 5, 6, 9, 12... grain cereals. So I used barley flakes. lol
well, here is the list of ingredients and amounts.
4 eggs
1lb spelt flour
3/4lb buckwheat flour
8oz quinoa
8oz red quinoa
3/4lb barley flakes
1lb buckwheat groats
1/3lb sesame seed
1/3lb flax seed
1/2lb millet
1/4lb pine nuts
2/3lb wheat berries
1/4lb walnuts
1/3lb almonds
2 med garnet yams (sweet potatoes)
4 regular bananas
1 can solid pack pumpkin
1 jar applesauce
1 bundle beets (with greens)
2 mangoes
The walnuts I tossed in the food processor. The almonds were slivered so I let them be. Pinenuts I left whole.
I mix all the dry ingredients together first.
then I toss the eggs and garnet yams in the food processor.
Actually, all the rest goes in the food processor. lol
Then I mix it all together.
I use a table spoon to make large sized meatballs, then flatten them out on the cookie sheet. As this batch feels a bit damp I flattened out the cookies a little more then usual. I get 1 dozen per sheet instead of 15 like the previous batches.
Pre heat over to 375 and bake for 30 minutes. They seem to be coming out real good!!
The beets give the batter such a wonderful color!!!
