I, like BF, do a fresh veggie chop every day. I am looking for suggestions on the "other than green" veggies. I often do yellow squash, yellow/red/orange peppers, carrots of course. But that is only 3 varieties. What else?

Is purple cabbage OK nutritionally?
Oh, sometimes I do add red chilies too.

Ideas? Suggestions?

sweet potatoes are always a good idea :D

Zucchini, butternut squash, acorn squash, spaghetti squash, pumpkin ... those are all "orange/yellow" but are healthy. You can lightly cook them so that they stay a little firm (the same applies to the sweet potatoes)

I do a layered salad, so I am not sure cooked would work. How long would they need to be cooked to be safe to consume? (sweet potatoes) etc.

I almost always have fresh beets on hand and give them to Keiki in her morning salad, along with the greens. I keep telling her I want to see purple poop!
