I did forget the cauliflower and sweet potato I bought. My crowd prefers their chop coarse, and on the dry side, not mushy. I prep when I still have about 10-14 days of previous chop left, so I can both blend, and adjust and start over if this batch is rejected. A couple of these ingredients are brand new additions, so I only made a half batch.
It felt small compared to other batches of chop I've made. I often add more root veggies, more variety of leafy greens (I cheaped out and got leaf mixes from the salad section), and more squash type stuff. I needed an easy and quick one this time, but looking at it all written out, it's a lot more variety than I realized. I'm glad I took the time to write it out. Seems heavy on the seedy side this time, but quantities are low.
