Hey,
I had a three year old hen, and other adults, and none ever molted, as far as I know. Is that possible?

Probably not. All of my chickens molt, usually in the fall.

The pacing varies. Some chickens drop a lot of feathers all at once. Others lose a few at a time over a longer period, so it is less noticeable.
