Sun Conure

So I had my Sun Conure Rico for a month now. He comes to me with no problem, only allows me to rub him sometimes. I'm having trouble knowing exactly what he likes to eat. He loves apples but I don't want to keep giving just that. So any advice on that is great and when do I start training him if he doesn't fully trust me yet?
