Hand held. It is not easy to get bird shots using a tripod, due to movement of the little feathered maniacs.

Optical Image Stabilization and a fast shutter speed.

I use both of those but it depends on the camera (some don't have in camera image stabilization) and, unfortunately, I'm not usually fast enough to grab my camera when I see an interesting bird in the backyard.
