This growing season has been FANTASTIC! My mother in laws pumpkins are massive this year and all of the produce I've had has been exceptional! I picked 30lbs of blueberries and some of them were the circumference of quarters, it was awesome :)
@saroj12 do you take the seeds out or leave them in?

I need to try something new for Secrets medicine
these are regular, they didn't have organic. no one ate them, just shredded them lol! yes semi cooked.

wow! A bountiful season indeed! i remove the seeds and add three or four back in. I worry about the oil content though being raw i imagine they are not too oily? they love the seeds!

I'm glad you asked. I was also pretty lost. I'm very recipe-dependent in the kitchen. :blink:

I'm glad you posted this! I need to stock up and keep an eye out for cranberries, too. I put some of the guts in chop raw, but I toast some seeds separate, usually with some chili powder. I bake the pumpkins and serve some raw, much the way @saroj12 did in the picture.

Here's an old shot of Ziva eating one I stuck on the bolt the bowl screws onto. It's got chop in it, too. Sigh.

How long do you nuke for in microwave? May stop and get a couple of little ones to try. Just cut the tops off before microwaving?

I microwave the little ones for 45 secs, then cut the top off. It's too hard for me to slice it off if the pumpkin is raw.

Another thing everyone should know is that pumpkins and squashes can be hoarded in pretty large numbers for use during the winter. All you need is a cool dry room for them to rest in. Check them every two weeks or month for signs of breakdown (discolored spots) and use the ones showing signs of spots quickly. You could have pumpkins and squash when spring rolls around. Cow pumpkins are called what they are because farmers could put them in the cold cellar or the barn and give them to the cows as supplemental feed during the winter. The high vitamin C content cut down on deficiency diseases and the pumpkin flesh was sweet and high fiber.

And they are so huge because of all the early rain we had this year.
