If the male is only split to opaline, then only half of the females will be opaline. All of the opalines from the described pair will be female. It is possible for you to have lutino males if the male is split to lutino.

The bird in front in your second picture is a fallow. The mutation is a normal recessive mutation just like the blue series mutations.

You would need either a visual fallow, or a split to fallow, mate, and yes, the bird could be male or female.
